Ingredients

  • Almond flour - 100 grams
  • Unsalted butter - 50 grams, melted
  • Egg - 1 large
  • Salt - 1/4 teaspoon
  • Zucchini - 100 grams, thinly sliced
  • Eggplant - 100 grams, thinly sliced
  • Bell pepper - 100 grams, thinly sliced
  • Tomato - 100 grams, thinly sliced
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the almond flour, melted butter, 1 egg, and 1/4 teaspoon of salt until a dough forms.
  3. Press the dough into the bottom and up the sides of a 9-inch tart pan evenly, then prick the bottom with a fork.
  4. Bake the crust in the preheated oven for 10 minutes until slightly golden.
  5. While the crust is baking, prepare the vegetables. In a mixing bowl, combine zucchini, eggplant, bell pepper, tomato, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  6. Toss the vegetables until well coated with oil and seasonings.
  7. Remove the crust from the oven and layer the vegetable mixture evenly on top.
  8. Return the tart to the oven and bake for an additional 30 minutes, or until the vegetables are tender and slightly caramelized.
  9. Remove from the oven, sprinkle with fresh basil, and let cool for a few minutes before slicing and serving.
