Ingredients

  • 2 large bell peppers (any color) - 400g
  • 200g ground beef or ground turkey
  • 100g cauliflower rice
  • 50g grated Parmesan cheese
  • 50g shredded mozzarella cheese
  • 1 medium onion - 100g, finely chopped
  • 2 cloves garlic - 6g, minced
  • 1 medium tomato - 100g, diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt - to taste
  • Pepper - to taste
  • 2 tbsp olive oil - 30ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them in a baking dish.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  4. Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  5. Stir in the cauliflower rice, diced tomato, dried thyme, dried oregano, salt, and pepper. Cook for an additional 5 minutes until everything is well mixed and heated through.
  6. Remove the skillet from heat and mix in the grated Parmesan and half of the shredded mozzarella cheese.
  7. Spoon the meat and cauliflower mixture evenly into the hollowed bell peppers, pressing down gently to pack it in.
  8. Top each stuffed pepper with the remaining shredded mozzarella cheese.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
  10. Once done, remove from the oven and let them cool for a few minutes before serving.
