Ingredients
- 2 large bell peppers (any color) - 400g
- 200g ground beef or ground turkey
- 100g cauliflower rice
- 50g grated Parmesan cheese
- 50g shredded mozzarella cheese
- 1 medium onion - 100g, finely chopped
- 2 cloves garlic - 6g, minced
- 1 medium tomato - 100g, diced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt - to taste
- Pepper - to taste
- 2 tbsp olive oil - 30ml
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them in a baking dish.
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the cauliflower rice, diced tomato, dried thyme, dried oregano, salt, and pepper. Cook for an additional 5 minutes until everything is well mixed and heated through.
- Remove the skillet from heat and mix in the grated Parmesan and half of the shredded mozzarella cheese.
- Spoon the meat and cauliflower mixture evenly into the hollowed bell peppers, pressing down gently to pack it in.
- Top each stuffed pepper with the remaining shredded mozzarella cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
- Once done, remove from the oven and let them cool for a few minutes before serving.
