Ingredients

  • Zucchini - 2 medium
  • Fresh basil leaves - 50 grams
  • Pine nuts - 30 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove
  • Olive oil - 60 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, garlic clove, salt, and black pepper.
  3. While the food processor is running, slowly drizzle in the olive oil until the mixture becomes a smooth pesto sauce.
  4. In a large skillet over medium heat, add the zucchini noodles and cook for 3-4 minutes until slightly softened.
  5. Remove the skillet from heat and stir in the homemade pesto until the zucchini noodles are well coated.
