- Ground beef - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Diced tomatoes - 400 grams (canned)
- Italian seasoning - 1 teaspoon
- Red wine - 50 ml (optional)
- Parmesan cheese - 30 grams, grated
- Fresh basil - for garnish
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, eggs, olive oil, and salt to form a dough. Knead until smooth and let it rest for 10 minutes.
- Roll the dough into a thin sheet and cut into wide strips (pappardelle shape). Allow the pasta to dry slightly while you prepare the ragu.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in the tomato paste, diced tomatoes, Italian seasoning, and red wine. Simmer for 15-20 minutes until the sauce thickens, stirring occasionally.
- Meanwhile, bring a pot of salted water to a boil. Cook the pappardelle for 3-4 minutes until al dente, then drain.
- Serve the pappardelle topped with the ragu sauce, garnished with grated Parmesan cheese and fresh basil.
