  • Olive oil - 1 tablespoon

  • Ground beef - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Diced tomatoes - 400 grams (canned)
  • Italian seasoning - 1 teaspoon
  • Red wine - 50 ml (optional)
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - for garnish

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, eggs, olive oil, and salt to form a dough. Knead until smooth and let it rest for 10 minutes.
  2. Roll the dough into a thin sheet and cut into wide strips (pappardelle shape). Allow the pasta to dry slightly while you prepare the ragu.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in the tomato paste, diced tomatoes, Italian seasoning, and red wine. Simmer for 15-20 minutes until the sauce thickens, stirring occasionally.
  6. Meanwhile, bring a pot of salted water to a boil. Cook the pappardelle for 3-4 minutes until al dente, then drain.
