  • Ground pork - 200g
  • Ground beef - 100g
  • Pâté de foie or chicken liver - 100g
  • Almond flour - 150g
  • Butter - 100g
  • Egg - 1 large
  • Heavy cream - 50ml
  • Garlic - 1 clove, minced
  • Dried thyme - 1 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Nutmeg - a pinch
  • Egg wash (for brushing) - 1 egg, beaten

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine ground pork, ground beef, pâté de foie, minced garlic, thyme, salt, pepper, and nutmeg. Mix well until fully incorporated.
  3. In a separate bowl, melt the butter and mix it with almond flour until it forms a crumbly texture. Add 1 egg and heavy cream to the mixture, and knead until a dough forms.
  4. Roll out the dough between two sheets of parchment paper into a rectangular shape, about 0.5 cm thick.
  5. Place half of the meat mixture in the center of the dough, then fold the dough over the filling, sealing the edges well.
  6. Transfer the wrapped pâté onto a baking sheet lined with parchment paper.
  7. Brush the top with beaten egg for a golden finish.
  8. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the internal temperature reaches 75°C (165°F).
  9. Allow to cool for 10 minutes before slicing and serving.
