- Ground pork - 200g
- Ground beef - 100g
- Pâté de foie or chicken liver - 100g
- Almond flour - 150g
- Butter - 100g
- Egg - 1 large
- Heavy cream - 50ml
- Garlic - 1 clove, minced
- Dried thyme - 1 tsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Nutmeg - a pinch
- Egg wash (for brushing) - 1 egg, beaten
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine ground pork, ground beef, pâté de foie, minced garlic, thyme, salt, pepper, and nutmeg. Mix well until fully incorporated.
- In a separate bowl, melt the butter and mix it with almond flour until it forms a crumbly texture. Add 1 egg and heavy cream to the mixture, and knead until a dough forms.
- Roll out the dough between two sheets of parchment paper into a rectangular shape, about 0.5 cm thick.
- Place half of the meat mixture in the center of the dough, then fold the dough over the filling, sealing the edges well.
- Transfer the wrapped pâté onto a baking sheet lined with parchment paper.
- Brush the top with beaten egg for a golden finish.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the internal temperature reaches 75°C (165°F).
- Allow to cool for 10 minutes before slicing and serving.
