- Butter - 30g
- Beef broth - 500ml
- Dry white wine (or dry vermouth) - 60ml
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Pepper - to taste
- Gruyère cheese - 100g, grated
- Parmesan cheese - 30g, grated
- Almond flour - 2 tablespoons (for thickening, optional)
Steps
- Slice the yellow onions thinly and set aside.
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the dry white wine and scrape the bottom of the pot to deglaze it, allowing the liquid to reduce by half.
- Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 10-15 minutes to let the flavors meld together.
- If using, stir in the almond flour to thicken the soup slightly and simmer for an additional 5 minutes.
- Remove the bay leaf and ladle the soup into oven-safe bowls. Top each bowl with a generous amount of Gruyère and Parmesan cheese.
- Place the bowls under a broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve immediately.
