Ingredients

  • Zucchini - 2 medium (about 400g)
  • Heavy cream - 120 ml
  • Unsalted butter - 30 g
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 50 g, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create fettuccine-like noodles. Set aside.
  2. In a skillet, melt the unsalted butter over medium heat.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
  4. Pour in the heavy cream and bring to a gentle simmer. Cook for about 3-4 minutes until slightly thickened.
  5. Stir in the grated Parmesan cheese, salt, black pepper, and a pinch of nutmeg. Mix until the cheese is melted and the sauce is creamy.
  6. Add the spiralized zucchini noodles to the skillet, tossing them in the Alfredo sauce until well coated. Cook for an additional 2-3 minutes until the noodles are tender.
  7. Remove from heat and garnish with fresh parsley before serving.
