Ingredients
- Cauliflower - 300 grams
- Butter - 50 grams
- Heavy cream - 100 ml
- Grated Gruyère cheese - 100 grams
- Deli ham - 100 grams
- Egg - 2 large
- Garlic powder - 1 teaspoon
- Dijon mustard - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Almond flour - 50 grams
Steps
- Preheat your oven to 200°C (390°F).
- Steam the cauliflower until tender, then drain and let it cool slightly.
- In a food processor, blend the cauliflower until it resembles rice, then add the almond flour, 25 grams of butter, 1 egg, garlic powder, salt, and pepper. Pulse until well combined.
- Spread the cauliflower mixture evenly onto a baking sheet lined with parchment paper to form a pizza-like base, about 1 cm thick. Bake for 15 minutes until golden.
- In a saucepan over medium heat, melt the remaining 25 grams of butter. Stir in the heavy cream and Dijon mustard, then add half of the grated Gruyère cheese until melted and creamy. Season with salt and pepper.
- Once the cauliflower base is baked, remove it from the oven and layer the ham evenly on top. Pour the cheese sauce over the ham and sprinkle the remaining Gruyère cheese on top.
- Return the dish to the oven and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
