Ingredients

  • Almond flour - 100g

  • Unsweetened almond milk - 150ml
  • Butter - 30g, melted
  • Vanilla extract - 1 tsp
  • Salt - 1/4 tsp
  • Erythritol or other keto sweetener - 2 tbsp
  • Orange zest - 1 tsp
  • Orange juice - 30ml
  • Grand Marnier (or sugar-free orange liqueur) - 1 tbsp
  • Butter - for cooking crêpes - as needed

Steps

  1. In a mixing bowl, combine almond flour, eggs, almond milk, melted butter, vanilla extract, salt, and erythritol. Whisk until smooth and let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter to coat.
  3. Pour a ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges lift and the bottom is lightly golden.
  4. Flip the crêpe and cook for an additional 1 minute. Repeat with remaining batter, stacking crêpes on a plate.
  5. In a small saucepan, combine orange zest, orange juice, Grand Marnier, and remaining erythritol over medium heat. Let it simmer for 5 minutes until slightly thickened.
  6. To serve, fold the crêpes into quarters and drizzle the orange sauce over them. Optionally, garnish with additional orange zest.
