- Almond flour - 100g
- Eggs - 2 large
- Unsweetened almond milk - 150ml
- Butter - 30g, melted
- Vanilla extract - 1 tsp
- Salt - 1/4 tsp
- Erythritol or other keto sweetener - 2 tbsp
- Orange zest - 1 tsp
- Orange juice - 30ml
- Grand Marnier (or sugar-free orange liqueur) - 1 tbsp
- Butter - for cooking crêpes - as needed
Steps
- In a mixing bowl, combine almond flour, eggs, almond milk, melted butter, vanilla extract, salt, and erythritol. Whisk until smooth and let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a small amount of butter to coat.
- Pour a ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges lift and the bottom is lightly golden.
- Flip the crêpe and cook for an additional 1 minute. Repeat with remaining batter, stacking crêpes on a plate.
- In a small saucepan, combine orange zest, orange juice, Grand Marnier, and remaining erythritol over medium heat. Let it simmer for 5 minutes until slightly thickened.
- To serve, fold the crêpes into quarters and drizzle the orange sauce over them. Optionally, garnish with additional orange zest.
