- Chicken thighs - 400 grams
- Bacon - 100 grams, diced
- Red wine (dry, low-carb) - 120 ml
- Chicken broth - 200 ml
- Mushrooms - 150 grams, sliced
- Garlic - 2 cloves, minced
- Shallots - 2, diced
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove bacon and set aside, leaving the fat in the skillet.
- In the same skillet, add chicken thighs, season with salt and pepper, and brown on all sides for about 5-7 minutes. Remove and set aside.
- Add shallots and garlic to the skillet, cooking until softened, about 3 minutes. Then add sliced mushrooms and cook until tender.
- Deglaze the skillet with red wine, scraping up any browned bits, and let it reduce for 2-3 minutes.
- Return the chicken and bacon to the skillet. Pour in the chicken broth, and add thyme and bay leaf. Bring to a simmer.
- Cover and cook on low heat for 30-35 minutes, or until the chicken is tender and cooked through.
- Remove the bay leaf and thyme sprigs before serving. Adjust seasoning if necessary.
