Ingredients

  • Chicken thighs - 400 grams
  • Bacon - 100 grams, diced
  • Red wine (dry, low-carb) - 120 ml
  • Chicken broth - 200 ml
  • Mushrooms - 150 grams, sliced
  • Garlic - 2 cloves, minced
  • Shallots - 2, diced
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove bacon and set aside, leaving the fat in the skillet.
  2. In the same skillet, add chicken thighs, season with salt and pepper, and brown on all sides for about 5-7 minutes. Remove and set aside.
  3. Add shallots and garlic to the skillet, cooking until softened, about 3 minutes. Then add sliced mushrooms and cook until tender.
  4. Deglaze the skillet with red wine, scraping up any browned bits, and let it reduce for 2-3 minutes.
  5. Return the chicken and bacon to the skillet. Pour in the chicken broth, and add thyme and bay leaf. Bring to a simmer.
  6. Cover and cook on low heat for 30-35 minutes, or until the chicken is tender and cooked through.
  7. Remove the bay leaf and thyme sprigs before serving. Adjust seasoning if necessary.
