Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Mushrooms - 150 grams, sliced
  • Chicken broth - 200 ml, low sodium
  • Heavy cream - 100 ml
  • Dijon mustard - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish, chopped

Steps

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the chicken thighs, season with salt and pepper, and cook until browned on all sides, about 6-8 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced mushrooms, cooking until soft, about 5 minutes.
  6. Pour in the chicken broth, scraping the bottom of the skillet to deglaze, and bring to a simmer.
  7. Stir in the heavy cream, Dijon mustard, and dried thyme, mixing well.
  8. Return the chicken to the skillet, reduce heat to low, and simmer for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
  9. Meanwhile, spiralize the zucchini and lightly sauté in a separate pan for 2-3 minutes until al dente.
  10. Serve the chicken fricassée over the zucchini noodles, garnished with chopped parsley.
