Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Pork sausages - 150 grams, cut into slices
  • Bacon - 100 grams, diced
  • Zucchini - 1 medium, diced
  • Cauliflower - 200 grams, riced
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Chicken broth - 250 milliliters, low sodium
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 50 grams, grated (for topping)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, then remove and set aside.
  3. In the same skillet, add the chicken thighs and pork sausages. Sear them until browned on all sides, then remove and set aside with the bacon.
  4. Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.
  5. Stir in the diced zucchini and riced cauliflower, cooking for an additional 5 minutes.
  6. Return the meats to the skillet, adding the chicken broth, thyme, rosemary, salt, and pepper. Mix well and bring to a simmer.
  7. Sprinkle the grated Parmesan cheese evenly over the top of the mixture.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool slightly before serving.
