Ingredients
- Chicken thighs - 300 grams, boneless and skinless
- Pork sausages - 150 grams, cut into slices
- Bacon - 100 grams, diced
- Zucchini - 1 medium, diced
- Cauliflower - 200 grams, riced
- Garlic - 3 cloves, minced
- Onion - 1 small, diced
- Chicken broth - 250 milliliters, low sodium
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 50 grams, grated (for topping)
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy, then remove and set aside.
- In the same skillet, add the chicken thighs and pork sausages. Sear them until browned on all sides, then remove and set aside with the bacon.
- Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.
- Stir in the diced zucchini and riced cauliflower, cooking for an additional 5 minutes.
- Return the meats to the skillet, adding the chicken broth, thyme, rosemary, salt, and pepper. Mix well and bring to a simmer.
- Sprinkle the grated Parmesan cheese evenly over the top of the mixture.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool slightly before serving.
