Ingredients

  • Olive oil - 2 tablespoons
  • Shallots - 2, minced
  • Garlic - 3 cloves, minced
  • Tomato paste - 1 tablespoon
  • White wine - 100 ml (optional, can use vegetable broth instead)
  • Fish stock - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed seafood (shrimp, mussels, and white fish) - 300 grams total
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Zucchini noodles - 200 grams (for a pasta substitute)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced shallots and garlic, sautéing until translucent, about 2-3 minutes.
  2. Stir in the tomato paste and cook for another minute until fragrant.
  3. Pour in the white wine (or vegetable broth) and let it simmer for 2-3 minutes to reduce slightly.
  4. Add the fish stock, saffron threads, bay leaf, thyme, salt, and black pepper. Bring to a gentle simmer.
  5. Add the mixed seafood to the pot and cook for about 5-7 minutes, until the shrimp are pink and the mussels have opened.
  6. While the seafood is cooking, prepare the zucchini noodles in a separate pan with a bit of olive oil for about 3-4 minutes until just tender.
  7. Remove the pot from heat, discard the bay leaf, and stir in the chopped parsley and lemon juice.
  8. Serve the bouillabaisse hot over a bed of zucchini noodles.
