Ingredients

  • Beef chuck roast - 300g, cut into 2.5cm cubes
  • Bacon - 100g, diced
  • Mushrooms - 150g, quartered
  • Shallots - 2, peeled and halved
  • Garlic - 2 cloves, minced
  • Beef broth - 400ml
  • Red wine (dry) - 100ml
  • Olive oil - 2 tbsp
  • Fresh thyme - 2 sprigs
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Butter - 1 tbsp

Steps

  1. In a large Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  2. Increase the heat to medium-high and add the beef cubes to the pot. Season with salt and pepper, and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.
  3. In the same pot, add the olive oil, shallots, and garlic. Sauté for 2-3 minutes until the shallots are translucent.
  4. Add the quartered mushrooms and cook for an additional 5 minutes until they are golden brown.
  5. Return the bacon and beef to the pot, and pour in the red wine and beef broth. Add the thyme and bay leaf, then bring to a simmer.
  6. Cover the pot and reduce the heat to low. Let it simmer for 1.5 hours, stirring occasionally, until the beef is tender.
  7. Once cooked, remove the thyme and bay leaf. Stir in the butter for richness and adjust seasoning with salt and pepper as needed.
  8. Serve hot, garnished with fresh herbs if desired.
