- Couscous - 150 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Red bell pepper - 1, chopped
- Zucchini - 1, diced
- Eggplant - 1 small, diced
- Red onion - 1/2, chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, bring 250 ml of water to a boil with a pinch of salt.
- Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes to absorb the water.
- While the couscous is resting, heat 1 tablespoon of olive oil in a grill pan over medium heat.
- Add the red bell pepper, zucchini, eggplant, and red onion to the pan. Season with salt and pepper, and grill for about 7-10 minutes until the vegetables are tender and slightly charred, stirring occasionally.
- In a small skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Fluff the couscous with a fork and mix in the sautéed garlic, grilled vegetables, chopped parsley, and thyme. Adjust seasoning with salt and pepper to taste.
- Serve warm, garnished with additional herbs if desired.
