- Zucchini - 200 grams
- Eggplant - 150 grams
- Bell pepper (red or yellow) - 100 grams
- Cherry tomatoes - 150 grams
- Red onion - 100 grams
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams
- Fresh thyme - 5 grams
- Fresh rosemary - 5 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your grill or barbecue to medium heat.
- Wash and chop the zucchini, eggplant, bell pepper, and red onion into bite-sized pieces.
- Halve the cherry tomatoes and set aside.
- In a large bowl, combine the chopped vegetables with minced garlic, olive oil, salt, and black pepper. Toss well to coat.
- Finely chop the fresh basil, thyme, and rosemary, then add to the vegetable mixture, tossing gently to distribute the herbs evenly.
- Place the vegetable mixture in a grill basket or on a sheet of aluminum foil, sealing it tightly.
