Ingredients

  • Polenta - 150 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 20 grams, grated (optional for serving)

Steps

  1. In a medium saucepan, bring 500 milliliters of water to a boil.
  2. Once the water is boiling, slowly whisk in the polenta to avoid lumps.
  3. Reduce the heat to low and cook the polenta for about 10-15 minutes, stirring frequently until it thickens.
  4. Once thickened, remove from heat and stir in olive oil, garlic powder, dried oregano, dried basil, salt, and black pepper until well combined.
  5. Pour the polenta into a greased baking dish, spreading it evenly. Allow it to cool at room temperature for about 15-20 minutes until set.
  6. Preheat the oven to 220°C (428°F).
  7. Once the polenta has set, cut it into fry shapes and place them on a baking sheet lined with parchment paper.
  8. Drizzle the polenta fries with a little more olive oil and bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.
  9. Remove from the oven and sprinkle with fresh parsley and grated Parmesan cheese if desired before serving.
