- Polenta - 150 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 20 grams, grated (optional for serving)
Steps
- In a medium saucepan, bring 500 milliliters of water to a boil.
- Once the water is boiling, slowly whisk in the polenta to avoid lumps.
- Reduce the heat to low and cook the polenta for about 10-15 minutes, stirring frequently until it thickens.
- Once thickened, remove from heat and stir in olive oil, garlic powder, dried oregano, dried basil, salt, and black pepper until well combined.
- Pour the polenta into a greased baking dish, spreading it evenly. Allow it to cool at room temperature for about 15-20 minutes until set.
- Preheat the oven to 220°C (428°F).
- Once the polenta has set, cut it into fry shapes and place them on a baking sheet lined with parchment paper.
- Drizzle the polenta fries with a little more olive oil and bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.
- Remove from the oven and sprinkle with fresh parsley and grated Parmesan cheese if desired before serving.
