Ingredients

  • Puff pastry - 250 grams
  • Goat cheese - 150 grams
  • Heavy cream - 100 ml
  • Egg - 1 large
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface and fit it into a 20 cm (8 inch) tart pan, trimming the edges.
  3. In a mixing bowl, combine the goat cheese, heavy cream, egg, thyme, basil, garlic, salt, and pepper. Mix until smooth and well combined.
  4. Spread the goat cheese mixture evenly over the tart crust.
  5. Arrange the halved cherry tomatoes on top of the goat cheese filling, cut side up.
  6. Drizzle olive oil over the tomatoes and season with a little extra salt and pepper.
  7. Bake in the preheated oven for 25-30 minutes or until the tart is golden brown and the filling is set.
  8. Remove from the oven and let it cool for a few minutes before slicing.
  9. Serve warm, garnished with additional fresh herbs if desired.
