- Goat cheese - 150 grams
- Heavy cream - 100 ml
- Egg - 1 large
- Fresh thyme - 1 tablespoon, chopped
- Fresh basil - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface and fit it into a 20 cm (8 inch) tart pan, trimming the edges.
- In a mixing bowl, combine the goat cheese, heavy cream, egg, thyme, basil, garlic, salt, and pepper. Mix until smooth and well combined.
- Spread the goat cheese mixture evenly over the tart crust.
- Arrange the halved cherry tomatoes on top of the goat cheese filling, cut side up.
- Drizzle olive oil over the tomatoes and season with a little extra salt and pepper.
- Bake in the preheated oven for 25-30 minutes or until the tart is golden brown and the filling is set.
- Remove from the oven and let it cool for a few minutes before slicing.
