- Chicken breast - 300 grams
- Zucchini - 2 medium (approximately 300 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
Steps
- 1. Begin by slicing the zucchini into thin half-moons, about 1/4 inch thick.
- 2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes, until they are tender and slightly caramelized. Remove from the skillet and set aside.
- 3. In the same skillet, add the remaining tablespoon of olive oil. Season the chicken breasts with salt, pepper, thyme, and rosemary on both sides.
- 4. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 75°C).
- 5. In the last minute of cooking, add the minced garlic to the skillet with the chicken and stir until fragrant.
- 6. Once the chicken is cooked, return the sautéed zucchini to the skillet, tossing everything together to combine and warm through.
- 7. Serve hot, garnished with grated Parmesan cheese.
