Ingredients

  • Chicken breast - 300 grams
  • Zucchini - 2 medium (approximately 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. 1. Begin by slicing the zucchini into thin half-moons, about 1/4 inch thick.
  2. 2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes, until they are tender and slightly caramelized. Remove from the skillet and set aside.
  3. 3. In the same skillet, add the remaining tablespoon of olive oil. Season the chicken breasts with salt, pepper, thyme, and rosemary on both sides.
