- Haricots verts (thin green beans) - 250 grams
- Almonds (sliced) - 30 grams
- Unsalted butter - 15 grams
- Olive oil - 1 tablespoon
- Garlic (minced) - 1 clove
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Trim the ends of the haricots verts and rinse them under cold water.
- In a large pot, bring salted water to a boil and blanch the green beans for 2-3 minutes until bright green and tender-crisp.
- Drain the beans and immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain again and set aside.
- In a large skillet, heat the olive oil and butter over medium heat until the butter melts.
- Add the sliced almonds to the skillet and toast them for about 3-4 minutes, stirring frequently until golden brown.
- Add the minced garlic and sauté for an additional 1 minute until fragrant, being careful not to burn it.
- Stir in the blanched haricots verts and sauté for another 2-3 minutes until heated through.
- Remove from heat and drizzle with lemon juice, then season with salt and black pepper to taste.
- Toss everything gently to combine and serve immediately.
