Ingredients

  • Haricots verts (thin green beans) - 250 grams
  • Almonds (sliced) - 30 grams
  • Unsalted butter - 15 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Trim the ends of the haricots verts and rinse them under cold water.
  2. In a large pot, bring salted water to a boil and blanch the green beans for 2-3 minutes until bright green and tender-crisp.
  3. Drain the beans and immediately transfer them to an ice bath to stop the cooking process. Once cooled, drain again and set aside.
  4. In a large skillet, heat the olive oil and butter over medium heat until the butter melts.
  5. Add the sliced almonds to the skillet and toast them for about 3-4 minutes, stirring frequently until golden brown.
  6. Add the minced garlic and sauté for an additional 1 minute until fragrant, being careful not to burn it.
  7. Stir in the blanched haricots verts and sauté for another 2-3 minutes until heated through.
  8. Remove from heat and drizzle with lemon juice, then season with salt and black pepper to taste.
  9. Toss everything gently to combine and serve immediately.
