Steps
- Wash the haricots verts under cold water and trim the ends.
- Bring a pot of salted water to a boil, then add the green beans and blanch for 2-3 minutes until bright green and tender-crisp.
- Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again after a few minutes.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the blanched green beans to the skillet. Season with salt and black pepper, and sauté for another 3-4 minutes until heated through.
- Remove from heat, drizzle with lemon juice, and toss to combine.
- Transfer to a serving dish, garnish with chopped parsley, and serve immediately.
