Ingredients

  • Haricots verts (French green beans) - 250 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash the haricots verts under cold water and trim the ends.
  2. Bring a pot of salted water to a boil, then add the green beans and blanch for 2-3 minutes until bright green and tender-crisp.
  3. Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again after a few minutes.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Add the blanched green beans to the skillet. Season with salt and black pepper, and sauté for another 3-4 minutes until heated through.
  6. Remove from heat, drizzle with lemon juice, and toss to combine.
  7. Transfer to a serving dish, garnish with chopped parsley, and serve immediately.
