Ingredients
- Haricots Verts - 250 grams
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh Thyme - 1 teaspoon, chopped
- Lemon Juice - 1 tablespoon
- Salt - to taste
- Black Pepper - to taste
Steps
- Wash the haricots verts under cold water and trim the ends.
- In a large pot, bring salted water to a boil and blanch the haricots verts for 3-4 minutes until bright green and tender-crisp.
- Drain the beans and immediately transfer them to an ice bath to stop the cooking process. Let them cool for a couple of minutes, then drain again.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
- Add the blanched haricots verts to the skillet and toss to coat them in the garlic oil.
- Sprinkle in the chopped thyme, and season with salt and black pepper. Sauté for an additional 2-3 minutes until heated through.
- Remove from heat and drizzle with fresh lemon juice before serving.
