Ingredients

  • Haricots Verts - 250 grams
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh Thyme - 1 teaspoon, chopped
  • Lemon Juice - 1 tablespoon
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Wash the haricots verts under cold water and trim the ends.
  2. In a large pot, bring salted water to a boil and blanch the haricots verts for 3-4 minutes until bright green and tender-crisp.
  3. Drain the beans and immediately transfer them to an ice bath to stop the cooking process. Let them cool for a couple of minutes, then drain again.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
  5. Add the blanched haricots verts to the skillet and toss to coat them in the garlic oil.
  6. Sprinkle in the chopped thyme, and season with salt and black pepper. Sauté for an additional 2-3 minutes until heated through.
  7. Remove from heat and drizzle with fresh lemon juice before serving.
