- Cherry tomatoes - 200 grams, halved
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Fresh thyme - 5 grams, leaves only
- Olive oil - 4 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- In a large bowl, combine the zucchini, eggplant, bell peppers, red onion, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, minced garlic, salt, black pepper, fresh basil, fresh thyme, and balsamic vinegar.
