  • Red onion - 1 medium, cut into wedges
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Fresh thyme - 5 grams, leaves only
  • Olive oil - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the zucchini, eggplant, bell peppers, red onion, and cherry tomatoes.
