  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the zucchini, bell pepper, eggplant, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, minced garlic, thyme, rosemary, salt, and black pepper.
