- Ciabatta bread - 2 large pieces
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Red onion - 1 small, sliced
- Eggplant - 1 small, sliced
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh mozzarella cheese - 150 grams, sliced
- Fresh basil leaves - 10 leaves
Steps
- Preheat a grill pan or outdoor grill over medium heat.
- In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, red onion, and eggplant.
- Drizzle the vegetables with olive oil, balsamic vinegar, Italian seasoning, salt, and black pepper. Toss to coat evenly.
- Place the seasoned vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and have nice grill marks.
- While the vegetables are grilling, slice the ciabatta bread in half horizontally and lightly toast the insides on the grill for about 2 minutes.
- Once the vegetables are done, layer them on the bottom half of the ciabatta, adding slices of fresh mozzarella and fresh basil leaves.
- Cover with the top half of the ciabatta bread, pressing down slightly.
- Return the panini to the grill and press down with a heavy skillet or panini press. Grill for an additional 3-5 minutes on each side, or until the bread is crispy and the cheese is melted.
- Remove from the grill, slice in half, and serve warm.
