Ingredients

  • Ciabatta bread - 2 large pieces
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Eggplant - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh mozzarella cheese - 150 grams, sliced
  • Fresh basil leaves - 10 leaves

Steps

  1. Preheat a grill pan or outdoor grill over medium heat.
  2. In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, red onion, and eggplant.
  3. Drizzle the vegetables with olive oil, balsamic vinegar, Italian seasoning, salt, and black pepper. Toss to coat evenly.
  4. Place the seasoned vegetables on the grill and cook for about 5-7 minutes per side, or until they are tender and have nice grill marks.
  5. While the vegetables are grilling, slice the ciabatta bread in half horizontally and lightly toast the insides on the grill for about 2 minutes.
  6. Once the vegetables are done, layer them on the bottom half of the ciabatta, adding slices of fresh mozzarella and fresh basil leaves.
  7. Cover with the top half of the ciabatta bread, pressing down slightly.
  8. Return the panini to the grill and press down with a heavy skillet or panini press. Grill for an additional 3-5 minutes on each side, or until the bread is crispy and the cheese is melted.
  9. Remove from the grill, slice in half, and serve warm.
