Ingredients
- 2 large ripe tomatoes
- 100 grams cooked quinoa
- 50 grams feta cheese, crumbled
- 1 small zucchini, diced
- 1 small bell pepper, diced
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh basil, chopped
- Salt and pepper to taste
Steps
- Preheat the grill to medium heat.
- Cut the tops off the tomatoes and scoop out the seeds and pulp, leaving a hollow shell.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced zucchini, bell pepper, and minced garlic. Sauté for 5-7 minutes until softened.
- In a bowl, combine the cooked quinoa, sautéed vegetables, crumbled feta cheese, chopped thyme, basil, salt, and pepper. Mix well.
- Stuff each tomato with the quinoa mixture until filled to the top.
- Drizzle the remaining olive oil over the stuffed tomatoes and season with additional salt and pepper if desired.
- Place the stuffed tomatoes on the grill and cook for 10-15 minutes, or until the tomatoes are tender and slightly charred.
- Remove from the grill and let cool for a few minutes before serving.
