Ingredients

  • 2 large ripe tomatoes
  • 100 grams cooked quinoa
  • 50 grams feta cheese, crumbled
  • 1 small zucchini, diced
  • 1 small bell pepper, diced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh basil, chopped
  • Salt and pepper to taste

Steps

  1. Preheat the grill to medium heat.
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp, leaving a hollow shell.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced zucchini, bell pepper, and minced garlic. Sauté for 5-7 minutes until softened.
  4. In a bowl, combine the cooked quinoa, sautéed vegetables, crumbled feta cheese, chopped thyme, basil, salt, and pepper. Mix well.
  5. Stuff each tomato with the quinoa mixture until filled to the top.
  6. Drizzle the remaining olive oil over the stuffed tomatoes and season with additional salt and pepper if desired.
  7. Place the stuffed tomatoes on the grill and cook for 10-15 minutes, or until the tomatoes are tender and slightly charred.
  8. Remove from the grill and let cool for a few minutes before serving.
