- Zucchini - 100g
- Eggplant - 100g
- Red bell pepper - 100g
- Yellow bell pepper - 100g
- Cherry tomatoes - 100g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Puff pastry - 1 sheet (250g)
- Goat cheese - 50g, crumbled
- Balsamic glaze - for drizzling
Steps
- Preheat the grill to medium-high heat.
- Slice the zucchini, eggplant, and bell peppers into 1cm thick rounds. Halve the cherry tomatoes.
- In a bowl, toss the sliced vegetables with olive oil, minced garlic, thyme, salt, and black pepper.
- Grill the vegetables for about 5-7 minutes on each side until they are tender and have grill marks. Remove from heat and let them cool slightly.
- While the vegetables are grilling, roll out the puff pastry on a lightly floured surface to fit a 20cm tart pan.
- Transfer the rolled pastry to the tart pan, pressing it into the corners. Trim any excess pastry from the edges.
- Preheat the oven to 200°C (392°F).
- Layer the grilled vegetables over the puff pastry, starting with the zucchini, followed by eggplant, bell peppers, and finally cherry tomatoes.
- Sprinkle the crumbled goat cheese evenly over the top of the vegetables.
- Bake the tart in the oven for 20-25 minutes, or until the pastry is golden brown and cooked through.
- Remove from the oven and let it cool for a few minutes before drizzling with balsamic glaze.
- Slice and serve warm, enjoying the vibrant flavors of the grilled ratatouille.
