Ingredients

  • Zucchini - 100g
  • Eggplant - 100g
  • Red bell pepper - 100g
  • Yellow bell pepper - 100g
  • Cherry tomatoes - 100g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Puff pastry - 1 sheet (250g)
  • Goat cheese - 50g, crumbled
  • Balsamic glaze - for drizzling

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini, eggplant, and bell peppers into 1cm thick rounds. Halve the cherry tomatoes.
  3. In a bowl, toss the sliced vegetables with olive oil, minced garlic, thyme, salt, and black pepper.
  4. Grill the vegetables for about 5-7 minutes on each side until they are tender and have grill marks. Remove from heat and let them cool slightly.
  5. While the vegetables are grilling, roll out the puff pastry on a lightly floured surface to fit a 20cm tart pan.
  6. Transfer the rolled pastry to the tart pan, pressing it into the corners. Trim any excess pastry from the edges.
  7. Preheat the oven to 200°C (392°F).
  8. Layer the grilled vegetables over the puff pastry, starting with the zucchini, followed by eggplant, bell peppers, and finally cherry tomatoes.
  9. Sprinkle the crumbled goat cheese evenly over the top of the vegetables.
  10. Bake the tart in the oven for 20-25 minutes, or until the pastry is golden brown and cooked through.
  11. Remove from the oven and let it cool for a few minutes before drizzling with balsamic glaze.
  12. Slice and serve warm, enjoying the vibrant flavors of the grilled ratatouille.
