  • Cherry tomatoes - 100 grams
  • Red onion - 1 medium
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - 10 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Cut the zucchini, eggplant, and bell peppers into 2 cm cubes.
  3. Slice the red onion into wedges and leave the cherry tomatoes whole.
  4. In a large bowl, combine the olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
  5. Add the chopped vegetables and basil to the bowl, tossing to coat them evenly in the marinade.
  6. Let the vegetables marinate for about 10 minutes.
