- Red onion - 1 medium, cut into wedges
- Cherry tomatoes - 200 grams, halved
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your grill to medium-high heat.
- In a large bowl, combine the zucchini, eggplant, bell peppers, red onion, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, minced garlic, salt, black pepper, and balsamic vinegar.
- Pour the olive oil mixture over the vegetables and toss until well coated.
