- Quail - 2 whole (about 250g each)
- Olive oil - 2 tablespoons
- Fresh thyme - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Lemon - 1, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetables (zucchini, bell peppers, and asparagus) - 200g total
Steps
- Preheat your grill to medium-high heat.
- In a bowl, mix olive oil, chopped thyme, minced garlic, lemon juice, salt, and black pepper to create a marinade.
- Coat the quails in the marinade, ensuring they are thoroughly covered. Let them marinate for at least 15 minutes.
- While the quails are marinating, prepare the vegetables by slicing the zucchini and bell peppers, and trimming the asparagus.
- Place the vegetables in a bowl and drizzle with olive oil, salt, and pepper, tossing to coat.
- Once the grill is ready, place the marinated quails on the grill, cooking for about 6-8 minutes on each side, or until the internal temperature reaches 74°C (165°F).
- During the last 5 minutes of cooking the quails, add the seasoned vegetables to the grill and cook until they are tender and slightly charred.
- Remove the quails and vegetables from the grill and let them rest for a few minutes before serving.
