Ingredients

  • Quail - 2 whole (about 250g each)
  • Olive oil - 2 tablespoons
  • Fresh thyme - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Lemon - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetables (zucchini, bell peppers, and asparagus) - 200g total

Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix olive oil, chopped thyme, minced garlic, lemon juice, salt, and black pepper to create a marinade.
  3. Coat the quails in the marinade, ensuring they are thoroughly covered. Let them marinate for at least 15 minutes.
  4. While the quails are marinating, prepare the vegetables by slicing the zucchini and bell peppers, and trimming the asparagus.
  5. Place the vegetables in a bowl and drizzle with olive oil, salt, and pepper, tossing to coat.
  6. Once the grill is ready, place the marinated quails on the grill, cooking for about 6-8 minutes on each side, or until the internal temperature reaches 74°C (165°F).
  7. During the last 5 minutes of cooking the quails, add the seasoned vegetables to the grill and cook until they are tender and slightly charred.
  8. Remove the quails and vegetables from the grill and let them rest for a few minutes before serving.
