Ingredients

  • Polenta - 200 grams
  • Water - 800 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh thyme - 1 teaspoon (chopped)
  • Garlic - 2 cloves (minced)
  • Grilled vegetables (zucchini, bell peppers, eggplant) - 300 grams
  • Parmesan cheese - 30 grams (grated)

Steps

  1. In a pot, bring 800 milliliters of water to a boil and add 1 teaspoon of salt.
  2. Gradually whisk in 200 grams of polenta, stirring constantly to avoid lumps.
  3. Reduce heat to low and cook for about 20 minutes, stirring occasionally until thickened.
  4. Stir in 2 tablespoons of olive oil, 1/2 teaspoon black pepper, 1 teaspoon chopped thyme, and 2 cloves of minced garlic.
  5. Spread the polenta evenly in a greased baking dish and let it cool for about 10 minutes until set.
  6. Once set, cut the polenta into squares or triangles.
  7. Preheat a grill or grill pan over medium heat.
  8. Brush both sides of the polenta pieces with olive oil and grill for 3-4 minutes on each side until crispy and golden.
  9. While grilling, prepare the vegetables by slicing them and tossing with olive oil, salt, and pepper.
  10. Grill the vegetables until tender and slightly charred, about 5-7 minutes.
  11. Serve the grilled polenta topped with grilled vegetables and sprinkle with grated Parmesan cheese.
