Ingredients
- Polenta - 200 grams
- Water - 800 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh thyme - 1 teaspoon (chopped)
- Garlic - 2 cloves (minced)
- Grilled vegetables (zucchini, bell peppers, eggplant) - 300 grams
- Parmesan cheese - 30 grams (grated)
Steps
- In a pot, bring 800 milliliters of water to a boil and add 1 teaspoon of salt.
- Gradually whisk in 200 grams of polenta, stirring constantly to avoid lumps.
- Reduce heat to low and cook for about 20 minutes, stirring occasionally until thickened.
- Stir in 2 tablespoons of olive oil, 1/2 teaspoon black pepper, 1 teaspoon chopped thyme, and 2 cloves of minced garlic.
- Spread the polenta evenly in a greased baking dish and let it cool for about 10 minutes until set.
- Once set, cut the polenta into squares or triangles.
- Preheat a grill or grill pan over medium heat.
- Brush both sides of the polenta pieces with olive oil and grill for 3-4 minutes on each side until crispy and golden.
- While grilling, prepare the vegetables by slicing them and tossing with olive oil, salt, and pepper.
- Grill the vegetables until tender and slightly charred, about 5-7 minutes.
- Serve the grilled polenta topped with grilled vegetables and sprinkle with grated Parmesan cheese.
