- Red bell pepper - 1
- Yellow bell pepper - 1
- Zucchini - 1 medium
- Red onion - 1 small
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- Wash and cut the red and yellow bell peppers into quarters, remove seeds and stems.
- Slice the zucchini into 1/2-inch rounds and cut the red onion into wedges.
- In a large bowl, combine the olive oil, minced garlic, chopped thyme, salt, and black pepper.
- Add the prepared vegetables to the bowl and toss until evenly coated.
- Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally, until they are tender and have grill marks.
- Remove from the grill and drizzle with balsamic vinegar before serving.
