Ingredients

  • Red bell pepper - 1
  • Yellow bell pepper - 1
  • Zucchini - 1 medium
  • Red onion - 1 small
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and cut the red and yellow bell peppers into quarters, remove seeds and stems.
  3. Slice the zucchini into 1/2-inch rounds and cut the red onion into wedges.
  4. In a large bowl, combine the olive oil, minced garlic, chopped thyme, salt, and black pepper.
  5. Add the prepared vegetables to the bowl and toss until evenly coated.
  6. Place the vegetables on the grill and cook for about 10-12 minutes, turning occasionally, until they are tender and have grill marks.
  7. Remove from the grill and drizzle with balsamic vinegar before serving.
