Ingredients

  • Fennel bulbs - 2 medium
  • Kosher sausage (chicken or turkey) - 4 links (about 400g)
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your grill to medium heat.
  2. Trim the tops off the fennel bulbs and cut them into wedges, leaving the core intact to hold them together.
  3. In a mixing bowl, combine olive oil, chopped thyme, minced garlic, lemon juice, salt, and black pepper.
  4. Add fennel wedges to the bowl and toss gently to coat them evenly with the marinade.
  5. Place the fennel wedges on the grill and cook for about 8-10 minutes, turning occasionally until they are tender and have nice grill marks.
  6. While the fennel is grilling, grill the sausages for about 10-12 minutes, turning frequently until they are cooked through and have a nice char.
  7. Once cooked, remove fennel and sausages from the grill.
  8. Serve the grilled fennel and sausage together, garnished with a sprinkle of fresh thyme if desired.
