Ingredients

  • Eggplant - 1 large

  • Fresh basil - 1/4 cup, chopped
  • Sun-dried tomatoes - 1/4 cup, chopped
  • Nutritional yeast - 2 tablespoons
  • Walnuts - 1/4 cup, chopped
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat your grill to medium heat.
  2. Slice the eggplant lengthwise into 1/4-inch thick slices.
