Ingredients
- Asparagus - 250 grams
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic - 1 clove, minced
- Egg yolk - 1 large
- Lemon juice - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Vegetable oil - 1/4 cup
- Water - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- Trim the tough ends off the asparagus and rinse them under cold water.
- In a bowl, toss the asparagus with olive oil, salt, and black pepper until well coated.
- Place the asparagus on the grill and cook for 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the asparagus is grilling, prepare the aioli. In a mixing bowl, whisk together the egg yolk, minced garlic, lemon juice, and Dijon mustard.
- Slowly drizzle in the vegetable oil while whisking continuously until the mixture emulsifies and becomes thick.
- If the aioli is too thick, whisk in the tablespoon of water until you reach your desired consistency.
- Taste and adjust seasoning with salt or additional lemon juice if necessary.
- Once the asparagus is done grilling, remove from the grill and serve immediately with a generous dollop of aioli.
