Ingredients

  • Artichokes - 2 medium
  • Lemon - 1 large (juiced)
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 1 liter (for boiling)

Steps

  1. Fill a large pot with 1 liter of water and bring it to a boil. Add salt and prepare to blanch the artichokes.
  2. While the water is heating, prepare the artichokes by trimming the stems and cutting off the top third of each artichoke. Remove any small leaves at the base.
  3. Once the water is boiling, add the artichokes and cook for about 15 minutes until they are tender but still firm.
  4. Remove the artichokes from the boiling water and let them cool slightly. Cut each artichoke in half lengthwise and scoop out the fuzzy choke with a spoon.
  5. In a small bowl, mix together the lemon juice, olive oil, minced garlic, chopped parsley, black pepper, and additional salt to taste.
  6. Preheat the grill to medium heat. Brush the cut sides of the artichokes with the lemon mixture.
  7. Place the artichoke halves on the grill, cut side down. Grill for about 5-7 minutes until they have nice grill marks and are heated through.
  8. Flip the artichokes and grill for an additional 3-5 minutes, brushing with more lemon mixture as desired.
  9. Remove from the grill and serve warm, garnished with extra parsley and lemon wedges.
