Ingredients
- Artichokes - 2 medium
- Lemon - 1 large (juiced)
- Olive oil - 3 tablespoons
- Garlic - 2 cloves (minced)
- Fresh parsley - 2 tablespoons (chopped)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 1 liter (for boiling)
Steps
- Fill a large pot with 1 liter of water and bring it to a boil. Add salt and prepare to blanch the artichokes.
- While the water is heating, prepare the artichokes by trimming the stems and cutting off the top third of each artichoke. Remove any small leaves at the base.
- Once the water is boiling, add the artichokes and cook for about 15 minutes until they are tender but still firm.
- Remove the artichokes from the boiling water and let them cool slightly. Cut each artichoke in half lengthwise and scoop out the fuzzy choke with a spoon.
- In a small bowl, mix together the lemon juice, olive oil, minced garlic, chopped parsley, black pepper, and additional salt to taste.
- Preheat the grill to medium heat. Brush the cut sides of the artichokes with the lemon mixture.
- Place the artichoke halves on the grill, cut side down. Grill for about 5-7 minutes until they have nice grill marks and are heated through.
- Flip the artichokes and grill for an additional 3-5 minutes, brushing with more lemon mixture as desired.
- Remove from the grill and serve warm, garnished with extra parsley and lemon wedges.
