Ingredients

  • Globe Artichokes - 2
  • Olive Oil - 4 tablespoons
  • Lemon Juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh Thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Vegan Mayonnaise - 4 tablespoons (for dipping)
  • Smoked Paprika - 1/2 teaspoon (optional, for dipping)

Steps

  1. Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the artichokes in half lengthwise and remove the choke with a spoon.
  2. In a large pot, bring salted water to a boil and add the artichoke halves. Boil for 10-15 minutes until tender but not falling apart. Drain and let cool.
  3. In a small bowl, mix together olive oil, lemon juice, minced garlic, chopped thyme, salt, and black pepper to create a marinade.
  4. Once the artichokes are cool enough to handle, brush the marinade generously over the cut sides of each artichoke half.
  5. Preheat the grill to medium-high heat. Place the artichokes cut side down on the grill and cook for about 5-7 minutes, until they have nice grill marks.
  6. Flip the artichokes and grill the other side for another 5-7 minutes until heated through and charred.
  7. Serve warm with vegan mayonnaise mixed with smoked paprika for dipping.
