- Globe Artichokes - 2
- Olive Oil - 4 tablespoons
- Lemon Juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh Thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Vegan Mayonnaise - 4 tablespoons (for dipping)
- Smoked Paprika - 1/2 teaspoon (optional, for dipping)
Steps
- Prepare the artichokes by trimming the stems and removing the tough outer leaves. Cut the artichokes in half lengthwise and remove the choke with a spoon.
- In a large pot, bring salted water to a boil and add the artichoke halves. Boil for 10-15 minutes until tender but not falling apart. Drain and let cool.
- In a small bowl, mix together olive oil, lemon juice, minced garlic, chopped thyme, salt, and black pepper to create a marinade.
- Once the artichokes are cool enough to handle, brush the marinade generously over the cut sides of each artichoke half.
- Preheat the grill to medium-high heat. Place the artichokes cut side down on the grill and cook for about 5-7 minutes, until they have nice grill marks.
- Flip the artichokes and grill the other side for another 5-7 minutes until heated through and charred.
- Serve warm with vegan mayonnaise mixed with smoked paprika for dipping.
