- Fresh lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams, halved
- Zucchini - 1 medium, sliced
- Bell pepper (any color) - 1 medium, sliced
Steps
- In a bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, salt, and black pepper to create a marinade.
- Place the fish fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- Preheat your grill to medium-high heat.
- While the grill is heating, prepare the vegetables by tossing cherry tomatoes, zucchini, and bell pepper with a little olive oil, salt, and pepper.
- Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
- At the same time, grill the vegetables in a grill basket or on skewers for about 8-10 minutes, turning occasionally until tender and slightly charred.
- Once cooked, remove the fish and vegetables from the grill and serve immediately.
