  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper (any color) - 1 medium, sliced

Steps

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, salt, and black pepper to create a marinade.
  2. Place the fish fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat your grill to medium-high heat.
  4. While the grill is heating, prepare the vegetables by tossing cherry tomatoes, zucchini, and bell pepper with a little olive oil, salt, and pepper.
  5. Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  6. At the same time, grill the vegetables in a grill basket or on skewers for about 8-10 minutes, turning occasionally until tender and slightly charred.
  7. Once cooked, remove the fish and vegetables from the grill and serve immediately.
