- Zucchini - 200 grams
- Eggplant - 150 grams
- Cherry tomatoes - 100 grams
- Leek - 100 grams
- Garlic - 2 cloves
- Fresh parsley - 10 grams
- Olive oil - 2 tablespoons
- Heavy cream - 150 milliliters
- Grated Gruyère cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Wash and slice the zucchini, eggplant, and leek into thin rounds.
- Halve the cherry tomatoes and mince the garlic and parsley.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and leek, sautéing until soft and fragrant, about 3-4 minutes.
- Add the zucchini and eggplant to the skillet, cooking for another 5-7 minutes until they start to soften. Season with salt, pepper, and nutmeg.
- Stir in the cherry tomatoes and half of the fresh parsley, and cook for an additional 2 minutes. Remove from heat.
- In a mixing bowl, combine the heavy cream with half of the Gruyère cheese, and mix well.
- In a baking dish, layer the sautéed vegetable mixture evenly. Pour the creamy cheese mixture over the vegetables, spreading it evenly.
- Sprinkle the remaining Gruyère cheese and Parmesan cheese on top of the gratin.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with the remaining fresh parsley.
