Ingredients

  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Cherry tomatoes - 100 grams
  • Leek - 100 grams
  • Garlic - 2 cloves
  • Fresh parsley - 10 grams
  • Olive oil - 2 tablespoons
  • Heavy cream - 150 milliliters
  • Grated Gruyère cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and slice the zucchini, eggplant, and leek into thin rounds.
  3. Halve the cherry tomatoes and mince the garlic and parsley.
  4. In a large skillet, heat the olive oil over medium heat. Add the garlic and leek, sautéing until soft and fragrant, about 3-4 minutes.
  5. Add the zucchini and eggplant to the skillet, cooking for another 5-7 minutes until they start to soften. Season with salt, pepper, and nutmeg.
  6. Stir in the cherry tomatoes and half of the fresh parsley, and cook for an additional 2 minutes. Remove from heat.
  7. In a mixing bowl, combine the heavy cream with half of the Gruyère cheese, and mix well.
  8. In a baking dish, layer the sautéed vegetable mixture evenly. Pour the creamy cheese mixture over the vegetables, spreading it evenly.
  9. Sprinkle the remaining Gruyère cheese and Parmesan cheese on top of the gratin.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  11. Remove from the oven and let it cool for a few minutes before serving. Garnish with the remaining fresh parsley.
