  • Almond milk - 60 milliliters

  • Nutritional yeast - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh herbs (e.g., chives or parsley) - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes to thicken.
  3. In a saucepan over medium heat, combine water, almond milk, olive oil, garlic powder, salt, and black pepper. Bring to a gentle simmer.
  4. Once simmering, remove the saucepan from heat and quickly stir in the flour and baking powder until a dough forms.
  5. Add the flaxseed mixture and nutritional yeast to the dough, mixing well until smooth and combined.
  6. Fold in the chopped fresh herbs until evenly distributed.
  7. Using a spoon or a piping bag, drop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 5 cm apart.
  8. Bake in the preheated oven for 20 minutes, or until the gougères are golden brown and puffed up.
