Gougères au Fromage

Ingredients
- Water - 150 ml
- Unsalted butter - 50 g
- All-purpose flour - 75 g
- Eggs - 2 large
- Grated cheese (Gruyère or Comté) - 75 g
- Salt - 1/2 tsp
- Ground black pepper - 1/4 tsp
- Nutmeg (optional) - a pinch
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan, combine the water, butter, salt, and pepper. Heat over medium heat until the butter is melted and the mixture starts to boil.
- Remove the saucepan from heat and add the flour all at once, stirring vigorously until the mixture forms a smooth ball of dough.
- Return the saucepan to low heat and cook the dough for another 1-2 minutes, stirring constantly to dry it slightly.
- Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
- Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Stir in the grated cheese and nutmeg (if using) until fully incorporated.
- Using two spoons or a piping bag, scoop or pipe small mounds of dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed, golden brown, and crispy.
- Remove from the oven and serve warm.
