Ingredients

  • Water - 150 ml
  • Unsalted butter - 50 g
  • All-purpose flour - 75 g
  • Eggs - 2 large
  • Grated cheese (Gruyère or Comté) - 75 g
  • Salt - 1/2 tsp
  • Ground black pepper - 1/4 tsp
  • Nutmeg (optional) - a pinch

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the water, butter, salt, and pepper. Heat over medium heat until the butter is melted and the mixture starts to boil.
  3. Remove the saucepan from heat and add the flour all at once, stirring vigorously until the mixture forms a smooth ball of dough.
  4. Return the saucepan to low heat and cook the dough for another 1-2 minutes, stirring constantly to dry it slightly.
  5. Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
  6. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  7. Stir in the grated cheese and nutmeg (if using) until fully incorporated.
  8. Using two spoons or a piping bag, scoop or pipe small mounds of dough onto the prepared baking sheet, spacing them about 5 cm apart.
  9. Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed, golden brown, and crispy.
  10. Remove from the oven and serve warm.
