Ingredients

  • Lamb leg - 800 grams
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Fresh thyme - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Vegetable broth - 250 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.
  3. Rub the marinade all over the leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.
  4. Place the lamb in a roasting pan and pour the vegetable broth around it.
  5. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare or 70°C (160°F) for medium.
  6. Baste the lamb with the pan juices every 30 minutes to keep it moist.
  7. Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
  8. Serve with your choice of sides, drizzled with the pan juices.
