- Lamb leg - 800 grams
- Garlic - 4 cloves, minced
- Fresh rosemary - 2 tablespoons, chopped
- Fresh thyme - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Lemon juice - 2 tablespoons
- Vegetable broth - 250 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.
- Rub the marinade all over the leg of lamb, ensuring it is well coated. Let it marinate for at least 30 minutes at room temperature.
- Place the lamb in a roasting pan and pour the vegetable broth around it.
- Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare or 70°C (160°F) for medium.
- Baste the lamb with the pan juices every 30 minutes to keep it moist.
- Once cooked, remove the lamb from the oven and let it rest for 10-15 minutes before slicing.
- Serve with your choice of sides, drizzled with the pan juices.
