- Green cabbage - 200 grams, chopped
- Carrots - 150 grams, diced
- Potatoes - 200 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced carrots and potatoes to the pot, stirring occasionally for another 5 minutes.
- Stir in the chopped cabbage, smoked paprika, bay leaf, thyme, salt, and black pepper. Cook for about 5 minutes, until the cabbage starts to wilt.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 25-30 minutes, until all the vegetables are tender.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
