Ingredients

  • Green cabbage - 200 grams, chopped
  • Carrots - 150 grams, diced
  • Potatoes - 200 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced carrots and potatoes to the pot, stirring occasionally for another 5 minutes.
  3. Stir in the chopped cabbage, smoked paprika, bay leaf, thyme, salt, and black pepper. Cook for about 5 minutes, until the cabbage starts to wilt.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 25-30 minutes, until all the vegetables are tender.
  5. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
