Ingredients

  • Savoy cabbage - 200 grams, chopped
  • Carrots - 100 grams, diced
  • Leek - 1 medium, sliced
  • Potato - 150 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Smoked ham hock - 200 grams
  • Vegetable broth - 1 liter
  • Fresh thyme - 1 teaspoon
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
  2. Add the sliced leek, diced carrots, and diced potato to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped Savoy cabbage, along with the smoked ham hock, thyme, and bay leaf.
  4. Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and let it simmer for about 40-45 minutes, until the vegetables are tender and the flavors have melded.
  6. Remove the ham hock, shred the meat, and return it to the pot. Discard the bay leaf.
  7. Serve hot, garnished with fresh herbs if desired.
