Ingredients

  • Almond flour - 150 grams
  • Coconut flour - 30 grams
  • Eggs - 2 large
  • Water - 150 ml
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sausages (preferably pork or chicken) - 2 pieces
  • Fresh herbs (thyme or parsley) - 1 tablespoon, chopped

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a mixing bowl, combine almond flour, coconut flour, sea salt, and black pepper.
  3. In a separate bowl, whisk together the eggs and water until well combined.
  4. Gradually add the egg mixture to the flour mixture, stirring until a smooth batter forms.
  5. Heat a non-stick skillet over medium heat and add olive oil.
  6. Pour half of the batter into the skillet, spreading it evenly to form a round galette, about 20 cm in diameter.
  7. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 2-3 minutes.
  8. Remove from the skillet and repeat with the remaining batter to create a second galette.
  9. Meanwhile, cook the sausages in the same skillet until browned and cooked through, about 5-7 minutes.
  10. Once sausages are cooked, place one sausage on each galette and sprinkle with fresh herbs.
  11. Fold the galettes over the sausages and serve warm.
