- Almond flour - 150 grams
- Coconut flour - 30 grams
- Eggs - 2 large
- Water - 150 ml
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Sausages (preferably pork or chicken) - 2 pieces
- Fresh herbs (thyme or parsley) - 1 tablespoon, chopped
Steps
- Preheat your oven to 200°C (390°F).
- In a mixing bowl, combine almond flour, coconut flour, sea salt, and black pepper.
- In a separate bowl, whisk together the eggs and water until well combined.
- Gradually add the egg mixture to the flour mixture, stirring until a smooth batter forms.
- Heat a non-stick skillet over medium heat and add olive oil.
- Pour half of the batter into the skillet, spreading it evenly to form a round galette, about 20 cm in diameter.
- Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 2-3 minutes.
- Remove from the skillet and repeat with the remaining batter to create a second galette.
- Meanwhile, cook the sausages in the same skillet until browned and cooked through, about 5-7 minutes.
- Once sausages are cooked, place one sausage on each galette and sprinkle with fresh herbs.
- Fold the galettes over the sausages and serve warm.
