- Almond flour - 120 grams
- Butter, unsalted - 50 grams, softened
- Erythritol - 30 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Almond extract - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Heavy cream - 50 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, erythritol, baking powder, and salt.
- In another bowl, cream together the softened butter, egg, vanilla extract, and almond extract until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- Divide the dough in half and shape each half into a disc. Wrap in plastic wrap and refrigerate for 15 minutes.
- Roll out one disc on parchment paper to form a circle about 5 mm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- In a separate bowl, mix the heavy cream with the remaining almond flour mixture to create a smooth almond cream filling.
- Spread the almond cream filling evenly over the rolled-out dough, leaving a 1 cm border around the edges.
- Roll out the second disc of dough and place it on top of the filling, sealing the edges by pressing them together.
- Use a knife to make decorative slits on top of the galette, and brush the top with a beaten egg for a golden finish.
- Bake in the preheated oven for 25 minutes or until golden brown.
- Allow to cool slightly before slicing and serving.
