Ingredients

  • Almond flour - 120 grams
  • Butter, unsalted - 50 grams, softened
  • Erythritol - 30 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Almond extract - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Heavy cream - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, erythritol, baking powder, and salt.
  3. In another bowl, cream together the softened butter, egg, vanilla extract, and almond extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  5. Divide the dough in half and shape each half into a disc. Wrap in plastic wrap and refrigerate for 15 minutes.
  6. Roll out one disc on parchment paper to form a circle about 5 mm thick.
  7. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  8. In a separate bowl, mix the heavy cream with the remaining almond flour mixture to create a smooth almond cream filling.
  9. Spread the almond cream filling evenly over the rolled-out dough, leaving a 1 cm border around the edges.
  10. Roll out the second disc of dough and place it on top of the filling, sealing the edges by pressing them together.
  11. Use a knife to make decorative slits on top of the galette, and brush the top with a beaten egg for a golden finish.
  12. Bake in the preheated oven for 25 minutes or until golden brown.
  13. Allow to cool slightly before slicing and serving.
