Ingredients

  • Buckwheat flour - 100 grams
  • Water - 250 milliliters
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Shrimp - 100 grams, peeled and deveined
  • Scallops - 100 grams
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine buckwheat flour and salt. Gradually add water while whisking until smooth. Stir in the egg until fully incorporated. Let the batter rest for 15 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and scallops to the skillet. Cook for 3-4 minutes, or until shrimp turn pink and scallops are cooked through. Stir in lemon juice, chopped parsley, and black pepper. Remove from heat and set aside.
  4. Heat a non-stick skillet over medium heat. Pour a ladle of the batter into the skillet, tilting to spread evenly. Cook for 2-3 minutes until the edges lift and the bottom is lightly browned. Flip and cook for another 1-2 minutes.
  5. Repeat with remaining batter to make 2 galettes. Fill each galette with the seafood mixture, fold, and serve warm.
