  • Black pepper - 1/4 teaspoon
  • Garlic (minced) - 1 clove
  • Spinach (fresh) - 50 grams
  • Feta cheese (crumbled) - 50 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. In a mixing bowl, combine buckwheat flour, water, salt, and black pepper to create a smooth batter. Let it rest for 10 minutes.
  2. Meanwhile, rehydrate the seaweed mix in a bowl of warm water for 5 minutes, then drain and chop finely.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add fresh spinach and rehydrated seaweed to the skillet, cooking for 2-3 minutes until the spinach is wilted. Remove from heat and stir in crumbled feta cheese and lemon juice. Set aside.
  5. In the same skillet, add another tablespoon of olive oil and pour in half of the buckwheat batter, swirling the pan to create an even layer. Cook for 2-3 minutes until the edges begin to lift and the bottom is golden.
  6. Flip the galette and cook for another 2 minutes. Once done, transfer to a plate and fill with the spinach and seaweed mixture. Fold the galette over the filling.
  7. Repeat the process with the remaining batter to create a second galette.
  8. Garnish the galettes with chopped parsley and serve hot.
