Ingredients
- Buckwheat flour - 100 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Spinach - 50 grams
- Mushrooms - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Onion - 1 small, diced
- Garlic - 1 clove, minced
- Fresh herbs (parsley or chives) - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the buckwheat flour and salt. Gradually whisk in the water until you have a smooth batter. Let it rest for 15 minutes.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Sauté the diced onion and minced garlic until translucent, about 3-4 minutes.
- Add the sliced mushrooms and cook until they release their moisture and become tender, about 5 minutes.
- Stir in the spinach and cherry tomatoes, cooking until the spinach wilts, about 2-3 minutes. Season with salt and pepper to taste, then remove from heat.
- In the same skillet, add another tablespoon of olive oil and pour in a ladle of the buckwheat batter, swirling it to cover the pan evenly.
- Cook for about 2-3 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for another 1-2 minutes on the other side.
- Repeat with the remaining batter, adding more oil as needed.
- To serve, place a galette on a plate, top with the sautéed vegetable mixture, sprinkle with fresh herbs, and fold or roll it up.
