- Zucchini - 100 grams, thinly sliced
- Bell pepper - 50 grams, diced
- Mushrooms - 100 grams, sliced
- Spinach - 50 grams
- Feta cheese - 50 grams, crumbled
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a mixing bowl, combine buckwheat flour, water, and salt to form a smooth batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Pour a ladleful of the batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges lift and the bottom is golden.
- Flip the galette and add the sliced zucchini, diced bell pepper, sliced mushrooms, and spinach on one half. Sprinkle crumbled feta cheese and add black pepper to taste.
- Fold the galette over the filling and cook for an additional 2-3 minutes until the vegetables are tender and the cheese is slightly melted.
- Remove from heat, garnish with fresh parsley, and serve warm.
