  • Zucchini - 100 grams, thinly sliced
  • Bell pepper - 50 grams, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a mixing bowl, combine buckwheat flour, water, and salt to form a smooth batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little olive oil.
  3. Pour a ladleful of the batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges lift and the bottom is golden.
  4. Flip the galette and add the sliced zucchini, diced bell pepper, sliced mushrooms, and spinach on one half. Sprinkle crumbled feta cheese and add black pepper to taste.
  5. Fold the galette over the filling and cook for an additional 2-3 minutes until the vegetables are tender and the cheese is slightly melted.
  6. Remove from heat, garnish with fresh parsley, and serve warm.
